Chablis 2018

Domaine Chatelain

The Chatelain family has owned the Domaine since generations, working the particular kimmeridgian soil of Chablis. A special composition of pebbles, limestone and clay dating from the Jurassic period. This famous kimmeridgian soil, together with the influence of the river Serein and the microclimate of Chablis, offer the basis of the reputation of Chablis: a rich and elegant white wine with its delicate mineral style.

Grape variety: Chardonnay

Colour: Golden colour of green apple with silver reflections, brilliant and limpid.

Nose: Mineral bouquet with citrus fruit aromas.

Mouth: It has a very dry taste, slightly mineral, with a beautiful lingering flavour.

Food Pairing: First course, grilled fish or fish with light sauce, goats cheese…

Recommended Temperature: 10°C / 11°C

CHATEAUNEUF-DU-PAPE TRINITE

 

Power and finesse equal a truly great wine
This is a tiger waiting to pounce: gentle and sleek to look at, its power almost palpable,

yet walking on paws of velvet. Then an explosion of black fruit: cassis, blackberries, black cherries

and notes of roasting coffee, fully expressed in a beautifully long finish.

Vintage: 2018

Alcohol Content: 14,5%

Contains Sulfite

Terroir: Blue clay soils with a surface covering of Urgonian limestone and pudding-stones.

The south-east facing terroir enjoys the full benefit of the rising sun.
Grape Varieties: Grenache

Winemaking: Hand harvested. Fruit is transported to the winery in small crates and handled with great care.
Grapes are destemmed, crushed and cold-soaked for 12-48 hours with the cap submerged.
Alcoholic fermentation is started by native yeasts and continues at moderate temperatures

(24-28° C) for 25 days.
Aged in concrete tanks and new 500-litre barrels for 9-12 months (part of the blend only).
Excellent ageing potential.
Food-Wine pairings:  Lamb leg with rosemary, Porcini mushrooms sautéed with garlic and parsley

Côtes du Rhône « ECLIPSE » Red

 

Florian André offers his best selection of the Cotes du Rhone Terroirs

Eclipse is elaborated in organic agriculture with the most environmental respect,

following Florian’s philosophy. It refers to the plots of syrah exposed north-est,
which eclipse alternatively the sun and the moon. Grown on terrasses and exposed

north-est the syrah wake at down and spend the day in the shade. The grenaches
planted south are bathed in sun and swept by the Mistral. This is a fine and intense

Côtes du Rhône, with depth and balance. Intense flavours of red fruit blend with scents of
the garrigue, gradually melding together to give a long,  spicy finish.

Alcohol Content: 14%

Tasting : Very pale colour, almost white with pearly glints. Complex nose, soft,

fruity and peppery. Vibrant palate which opens out to reveal white-fleshed fruit notes,

mixed with exotic fruit. Lovely long finish.
Food and wine pairing : Aperitif, Fish Tajine, Lemon chicken, fish blanquette or shellfish and

chocolate based desserts. Tasting temperature : 10°C.

Tavel « Langoustière

 

Manissy’s own gastronomical Rosé
A top-flight Château de Manissy: a gastronomic wine perfect for pairing

with food, well-coloured, powerful and complex. Langoustière is named after

one of the finest Tavel terroirs, planted with some of the oldest vines.

The vineyard shelters a spring, filled, legend has it, with langoustes (crayfish)- hence the name.

Vinification: harvest at night to avoid oxidation and the use of SO2, keep the freshness

and protect the aromas. Fermentations are carried out with natural yeasts of the grapes,

at a controlled temperature of 28 degrees to preserve the fruity aromas. No added sulphites!

Tasting: Eye: deep, red nose colour: red fruit aromas, Mouth: red fruit notes, spices. Fine and melted tannins.       

Wine pairing: to be enjoyed throughout the year, on grilled meats, salads, risottos and cheeses

MAS DE CADENET ROSÉ

 

AOP CÔTES DE PROVENCE SAINTE VICTOIRE
WINE PROFILE: Mas de Cadenet is the main wine produced by the
vineyard. It best expresses the exceptional limestone
terroir of the Sainte- Victoire appellation. These wines
are full-bodied, seductively fruity and fresh, reflecting
the minerality of the terroir.

Vintage: 2019

Alcohol Content: 13%

GRAPE VARIETIES: 45% Grenache - 45% Cinsault - 10% Syrah
VINIFICATION: Early morning harvest (must at 10°C), Picking of the
grapes at rising maturity. Destemming, crushing of the berries and skin
maceration. Low temperature alcoholic fermentation (18°C), rack of gross lees.
Blending of the grape varieties.
TASTING NOTES: This light pink wine with a beautiful mineral freshness,
reveals delicate aromas of citrus, red fruits and flowers.
In the mouth, the limestone soil brings balance and
elegance, with a crispy length. Aromas bouquet is
persistent throughout, offering fruity and salty final. A delectable wine best served at 10°C.
FOOD PAIRING: This fresh and elegant rosé can be enjoyed by itself.
Easy pairing with Mediterranean dishes (tartare, ceviche, ratatouille…) as well as exotic food.
